Marlin Acapulco Recipe for Blue Marlin

Title: Marlin Acapulco

Servings: 4
Difficulty: Easy
Prep Time: 2 - 3 hours
Cook Time: 0!
Ingredients: 11/2lbs or Malin steak cut into bite size pieces

For Marinade:
4 tbl Oil
2/3 cup Dry white wine
1 Clove garlic -- crushed

For Homemade Thousand Island Dressing
(Or cheat and buy your favorite!)
1 Hard-boiled egg
1 cup Mayonnaise
1 tsp Tomato puree -- paste
2 tbl Onion -- finely chopped
Salt and pepper to your taste
Directions: Combine marinade ingredients; stir in fish. Cover and leave fish to marinate in refrigerator for 2-3 hours.
Thousand Island sauce :
chop egg. Put all ingredients into a bowl; season to taste with salt and pepper and mix together.
Spoon into a serving dish. Before cooking the fish in hot oil drain from marinade and arrange in a serving dish.
Other Notes: THis is for those of you who like all your fish cooked. As you may have guessed this is often eaten raw as well. Good sushi I'm told. I deep fry mine for 6-8 minutes and love it dipped in the sauce. Use your own judgment!
